Zombie Mudcakes | Halloween Recipe Ideas

Zombie CupcakesHalloween = diets out the window with all the tasty treats lining the shelves and our trick or treat buckets at the end of October. Last year I baked a batch of Spooky Ginger Spiced Sugar Cookies which were so cute, this year we’re going gory with my Zombie Mudcakes! Mint centred chocolate cupcakes with biscuit soil and a sugarpaste zombie hand – what more could you want on the scariest night of the year! Wash it down with one of my Red Widow cocktails and you’ve got yourself one hell of a Halloween party!Zombie Mudcakes (1)

What You’ll Need

(Makes 6 Monster-Size Cupcakes!)

For the Cakes:

25g Plain Chocolate

125g Butter

125g Caster Sugar

150g Self-raising flour

2 Large Eggs

2 Tbsp Cocoa Powder

Bourbon Biscuits

Green Sugarpaste

Red Piping Icing

For The Chocolate Buttercream:

100g Butter Softened

200g Icing Sugar

25g Cocoa Powder

For The Mint Buttercream:

100g Butter

225g Icing Sugar

Green Food Colouring

Drop Peppermint Essence

How To

1. Preheat your oven to 180oC/Gas Mark 4 

2. Melt your chocolate in a bowl over a saucepan and set aside to cool slightly

3. Mix the flour, butter, cocoa powder, sugar and eggs in a bowl and once combined stir in the plain chocolate

4. Split the mixture between 6 cupcake cases and bake for 20-30 minutes until a skewer comes out clean

To make the buttercream: Combine your ingredients in two separate bowls and beat together.

Core each cupcake and fill with mint buttercream. Top your cupcakes with the chocolate buttercream using a palette knife until the tops are completely covered. Break up your biscuits in a bag using a rolling pin until completely crumbled and roll each cupcake in the biscuits to create a soil effect.

To make your spooky zombie hands take a ball of sugarpaste and mold it into a pear drop shape – don’t worry about cracks, the more the better! Using a knife cut five fingers into the larger end. Mold the fingers until you’re happy with the shape before piping some ‘dripping blood’ using your red icing! Place your zombie hand on top of the soil and bury the end to make it look like they’re crawling out of the ground!
