Smoked Salmon and Broccoli Quiche Recipe

If you’ve never made quiche then you’re missing out! It’s a fantastic quick dish that’s hearty and so adaptable you’ll want to make it every week! I had a bit of extra time for this one so i made my own pastry, but if you’re in a rush then don’t feel too bad for using ready roll – even the professionals use it from time to time. If you’ve never made your own pastry then don’t worry, i got you covered with my fool-proof recipe and method passed down from my wonderful mum. You can have this quiche done from start to finish in under an hour when your pastry is chilled so what are you waiting for?!

For the pastry:

125g plain flour

55g butter, cubed

2-3tbsp cold water

pinch of salt

Put the flour and salt in a mixing bowl and quickly rub in the butter with your fingers until it looks like breadcrumbs. Stir in enough cold water to bind the mixture using a knife, cover with cling film and chill for 10-15minutes before rolling out.

For the quiche:

4 eggs

Milk

Grated cheese

Smoked Salmon

Cooked Broccoli (Cover in Clingfilm and steam in microwave for 3-4 minutes)

Before mixing your filling you will need to roll out your pastry and line the flan dish making sure that you compensate for any shrinking in the oven – something I didn’t do very well on this occasion as I was in a bit of a rush! Place a layer of grease proof paper over the uncooked pastry and fill the flan dish with baking beans or rice to weigh down the pastry. Blind bake for 10-15minutes at 190c (gas mark 5) to seal.

Crack the eggs into a measuring jug and top up to 1/2 a pint with milk. Season well and add your ingredients. Pour into the baked pastry case, sprinkle on grated cheese and cook at 190C for 30minutes until the quiche is set and risen….and that’s it!

Serve with fresh rocket and a minted three bean salad for a healthy and hearty spring time dinner!

You can mix up your ingredients to create a myriad of flavours – try cooked chicken and bacon with some extra strong cheese, yum yum!
