Black Treacle and Ginger Spiced Cake Recipe

Forget the super sweet flavours of Halloween, it’s time for warming spices and dark treacles just in time for Bonfire Night! This is one of my favourite cake recipes for this time of year from the legend that is Mary Berry and her Baking Bible – Black Treacle and Ginger Spiced Cake! It’s spicy, it’s deep and it’s oh so moreish – you can whip one up in under an hour and it’s sure to go down a storm at your fireworks party this weekend!

           What You’ll Need

  • 225g margarine, softened

  • 175g light muscovado sugar

  • 200g black treacle

  • 300g self-raising flour

  • 2 tsp baking powder

  • 1 tsp ground mixed spice

  • 1 tsp ground allspice

  • 4 eggs

  • 4 tbsp milk

  • 3 pieces stem ginger from a jar, finely chopped

    Icing

  • 100g icing sugar, sieved

  • 3 1/2 tbsp stem ginger syrup from the jar

  • 3 pieces stem ginger from a jar, chopped for decoration

How To

– Preheat your overn to 160oC/Gas Mark 3 and grease a 12×9 baking tin before lining with baking parchment (non-stick)

– Now, Mezza Bezza is a big fan of the all-in-one method so if you’re in a hurry you can just throw all your ingredients into a bowl and whisk together. Personally i like to whisk up my eggs in a seperate bowl adding them second to last before folding in my flour with a metal knife – it’s how my mum taught me to bake and i’ve not had a flat cake yet!

– Turn your mixture out into the tin easing it into all your corners with a spatula and leveling the top

– Bake for 40-45 minutes until the sides begin to shrink away from the tin and your traybake springs back when pressed lightly in the centre

– Let it cool for 5 minutes in the tin before turning out onto a cooling rack, removing the paper and leaving to cool completely

– For the icing, simply mix youricing sugar with the ginger syrup and spread over your cake before sprinkling on the chopped ginger to make it look extra pretty

I absolutely adore this cake, it’s dark and spicy and perfect for this time of year. Wrap some up and take it along to your firework display with a hot flask of mulled cider – what could be better!
