My one pot super easy slow cooker chicken fricassee recipe!

Stuck for dinner ideas? How about an easy dish to batch cook and take to work? Slow cooker recipes are a great way to whip up a tasty dinner with minimal effort and have it on the table as soon as you get in from work.

This slow cooker chicken fricassee recipe is filled with feel-good flavours, a creamy sauce and any veg you’ve got in the cupboard.

RECIPE: Slow Cooker Chicken Fricassee

Ingredients

250g Diced Chicken Thighs
3 White Potatoes
2 Garlic Cloves
1 Brown Onion
50g Soft Cheese
15ml Chinese Rice Wine
11g Chicken Stock Powder (or 1 cube)
Handful of fresh parsley (optional)
Any veg you’d like to include! (I usually use carrots, peas or anything unused from our Sunday roast!)

HOW TO

  1. Peel and quarter the onion and peel your garlic before crushing with the side of a knife
  2. Roughly chop your vegetables and potatoes into chunks
  3. Add potatoes, vegetables and chicken into your slow cooker (Feel free to brown the chicken first if you prefer, I skip this step for ease!)
  4. Add the rice wine, chicken stock and 350-400ml water
  5. Cook on High for 6 hours or low for 8 hours
  6. Before serving stir through the soft cheese and garnish with some parsley if you’re feeling extra fancy

If your sauce is feeling a little thin, simply take a couple of tablespoons and place into a bowl, add a tablespoon of cornflour and mix. Add this thickening mixture back into your slow cooker and stir – instant thicker sauce!

You can also make this recipe in the oven if you’re short on time. Simply brown the meat in an oven proof pan and add your other ingredients with boiling water before popping in the oven and cooking for 25 minutes! Stir through your soft cheese and return to the oven for an extra 5 minutes before serving.

Just a reminder, if you use purple carrots like I did, it will turn your fricassee a bit pink! But they’re SUPER tasty and full of good vitamins so worth including if you can find them at the supermarket or green grocer.

We love this recipe for mid-week meals as a super quick throw together dish that uses up any veg you have left in the cupboard. Packed full of flavour and lots of goodness, my slow cooker chicken fricassee is an easy one to rustle up and pretty easy to please everyone with.
